Nothing is more reminiscent of down home southern summers than blackberries. Hand picking these tart and sweet fruits, which grow on bushes and ripen sometime between mid and late summer, is a southern tradition enjoyed by children and adults alike. Almost everyone can remember the joy of finding bushes filled with plump blackberries and feasting on them until their tongues and their hands seemed permanently stained.

Blackberries are very nutritious. They are high in vitamins A and C, as well as other nutrients, and are packed full of fiber. They make a great healthy snack and are fabulous in desserts.

So, what could possibly be better than a handful of sweet, ripe blackberries? How about another favorite in the south - a blackberry cobbler. Here's an easy to follow recipe for a delicious blackberry cobbler.

Ingredients Needed for Quick and Easy Blackberry Cobbler

The list of ingredients is divided into two parts - one part for the blackberry filling and one part for the golden topping.

For the filling the following will be needed:

  • 1 1/2 cups of ripe blackberries
  • 2 TBSP. cornstarch
  • 3/4 cup of sugar
  • 1 tsp. of cinnamon
  • 1 cup of water

Ingredients for the topping are:

  • 1 cup of Bisquick Baking Mix
  • 2 tsp. of sugar
  • 2 TBSP. of melted butter
  • 1/3 cup of milk

Easy to Follow Instructions

Making a blackberry cobbler doesn't have to be difficult. Here's how:

  1. Preheat the oven to 400 degrees.
  2. Combine in a medium size saucepan the blackberries, cornstarch, sugar, cinnamon, and water.
  3. Bring the blackberry mixture to a boil. Reduce heat and cook for two minutes, being careful to stir constantly.
  4. Pour mixture into a casserole dish.
  5. Prepare topping by combining the Bisquick, sugar, melted butter, and milk. Mix well.
  6. Cover the blackberry mixture with the topping.
  7. Bake at 400 degrees for about 25 minutes or until golden brown on top and bubbly around the sides.
  8. Serve warm with vanilla ice cream or whipped topping.

Helpful Hints

Here's a few hints that will help in making blackberry cobbler.

  • Blackberries are delicious, but they are packed full of seeds. To make a cobbler without all those seeds, the seeds can be removed by placing the blackberries in a fine mesh metal sieve and pressing them through the sieve with either your hand or the back of a large spoon or ladle. Do this a handful of berries at a time, removing the seeds from the sieve between handfuls.
  • When cooking the blackberry mixture, the most important part is to keep stirring.
  • When adding the topping to the mixture, just drop by spoonfuls onto the top, distributing it evenly.
